Healthy recipe: celebrate Waffle Day with a fresh-baked waffle
Today it’s Waffle Day: eat a delicious, freshly baked waffle. It can, believe it or not, be healthy too. Together with Team Jumbo-Visma, the Bisschopsmolen in Maastricht developed the tastiest waffles for (top) athletes. And for anyone who appreciates a healthy snack.
Ingredients for 20 lactose-free recovery waffles
250 grams of olive oil (for example, from Finca Duernas)
250 grams sugar
1 packet of vanilla-flavored sugar
1 pinch of salt
6 eggs or egg substitute
100 grams (vegetable) milk
500 grams of Protein-rich Tritordeum Banquet Mix

Directions
• Beat the sugar, eggs, vanilla, and salt until it’s fluffy.
• Slowly add the olive oil.
• Mix the (vegetable) milk into the mixture.
• Carefully mix the Protein-rich Tritordeum Banquet Mix into the mass.
• Switch on the waffle iron.
• Lubricate the waffle iron lightly with olive oil for each new bake.
• Scoop batter from the bowl with a spoon and cover the waffle maker with the batter.
• Close the lid.
• Bake about 1-2 minutes on the medium setting.
• Delicious with fresh fruit or another topping

What proteins help the body recover, what carbohydrates are suitable for a fast or long-term performance: thanks to our collaboration with cycling, we now know the answer to these kinds of questions.”
