Food Friday – The favourite BBQ from Jos van Emden
Cycling is about pushing harder, but also about enjoying everything life has to offer. That's why a lot of our riders enjoy a good summer BBQ, like Jos van Emden. Do you want to know how you can make your BBQ cycling-proof? Keep on reading!
The menu of our riders focusses on carbohydrates and protein. Therefore, meat, fish, potatoes and bread are perfect key ingredients during a BBQ. Are you less active on a daily basis compared to our riders? Give your BBQ a healthy twist by choosing for lean meat, such as chicken and/or beef, and try to limit the amount of sauce you consume. Follow those tips and you can enjoy a healthy summer BBQ with the Tour de France on the background. While you're at it, try one of the recipes below, the favourites ones from Jos van Emden!
Recipe 1: Jacket potato with gently cooked chicken
Ingredients:
- 4 potatoes
- 200 grams slow cooked chicken fillet (available at Jumbo)
- 3 spoons garlic sauce
- 1 teaspoon parsley
Preparation:
- Clean the potatoes properly.
- Wrap the complete potatoes in tin foil. Place the potato packages on the side of the barbecue. If you place the potatoes too close to the fire, the outside can burn while the inside isn't cooked yet.
- Close the lid of the barbecue and pop the potatoes for about 20 to 30 minutes.
- In the meantime, prepare the chicken according to the instructions on the package.
- Pierce the potatoes with a fork. Can you pierce them without feeling any resistance? Your potatoes are done!
- Cut the potatoes lengthwise. Top with the chicken, garlic sauce and parsley. Ready to serve.
Recipe 2: BBQ bruschette
Ingredients:
- 1 ciabatta
- 1 clove of garlic
- 1 shallot (or union)
- Handful of (cherry) tomatoes
- Fresh basil
- 1 spoon olive oil, extra virgin
- Pepper and salt
Preparation:
- Chop the tomatoes and garlic.
- Heat the olive oil in a pan on the barbecue, and add the tomatoes, garlic and shallot. Cook for about 5 minutes and season with salt and pepper.
- In the meantime, cut the ciabatta into thin slices and chop the basil.
- Place the ciabatta slices onto the barbecue and grill both sides until crispy.
- Add the basil shortly to the tomato mixture.
- Spread the tomato mixture onto the ciabatta slices.
Recipe 3: Beefsteak with herbs and smokey barbecue sauce
Ingredients:
- 6 grams Italian herbs
- 3 cloves of garlic
- 0,5 teaspoon ground mustard seeds
- 8 spoons olive oil
- 1 kg beefsteak
- 100 ml smokey barbecue sauce
Preparation:
- Puree the herbs, garlic ground mustard seeds and olive oil by using the chopper from the hand mixer. Add some pepper and rub it onto the meat.
- Add the meat onto the hottest part of the barbecue and grill for about 5 minutes. Turn the beefsteak only once.
- Remove the meat from the barbecue, cut into thin slices and add the barbecue sauce.
